Just think for a few moments about how difficult it is for people who suffer with the speech impediment known as stammering to have the confidence to form a long lasting relationship with a man/woman. I am Stephen Hill and I had a stammer up until the age of twenty-two, at this point I managed to overcome the problem after a lot of hard work. Stammering badly affected my confidence and self-esteem. For many years I wondered if I would ever meet a girl who would be willing to be my girlfriend. I used to think in a very negative way and would often ask myself questions such as, why would any girl want to go out with me? What kind of girl is going to want to date somebody who has a lack of confidence and a stammer? At the age of sixteen I started going out with my friends to pubs and clubs. My friends seemed to find it quite easy to form relationships with girls where as I did not have any confidence in my ability to talk to them. I used to think things like: If I meet a girl I will have to buy her a drink. No problem you might think, however I found it very hard to order drinks at the bar. If I meet a girl I will be expected to phone her at least once a day. The phone was my worst area of speech and something I only used if I had to. If I meet a girl I will have to meet her friends and family. I used to dread meeting new people as they always seemed to ask so many direct questions such as where do you work? I wanted to have a shirt printed with all of the answers to the most popular questions as I would normally stammer under the pressure. It would be so much easier just to point to the answer or to say number one for example. I met my first ever girlfriend when I was eighteen, what a stud! I have to say she was superb and did not seem to care that I had a stammer. She was even happy to order my drinks and food for me and was basically a very nice girl. For whatever reason I did not believe that I was good enough for her and constantly worried that she would dump me. As you can see I was a very positive person. How would I cope if she left me? How long would it take me to meet somebody else who would be willing to date somebody with a stammer? This girl did leave me but I did date her for fourteen months. I did cope despite my reservations and was surprised to find that most girls/women that I met after this did not care that I had a stammer. I still found the whole dating process very difficult especially at the outset. IBS is characterized by abdominal pain and altered bowel function such as constipation, diarrhea or alternating diarrhea and constipation. Some people have occasional symptoms, which can be aggravated by stress or food intolerances. Others experience crippling symptoms, and struggle to maintain their quality of life in the absence of any targeted, effective pharmaceutical treatments. This disorder affects people of all ages and backgrounds, including children, although women are predominantly affected. Severe IBS can dramatically restrict mobility, through loss of control of bowel function and severe abdominal pain. These symptoms contribute to IBS being second only to the common cold as the most frequent cause of absenteeism from work and school. Whilst medical investigations are important to eliminate the possibility of an over-lapping pathology such as parasites, candida, inflammatory bowel disease, cealiacs or Crohns disease, there is no specific investigation which patients can test positive for in order to confirm a diagnosis of Irritable Bowel Syndrome. A diagnosis of IBS is more often a diagnosis of exclusion if its not another gastrointestinal condition, and it fits the symptom picture of IBS, then it is IBS. The current accepted criteria for diagnosing IBS is the Rome criteria (adopted in medical texts and by the American Gastroenterological Association). Their definition of IBS consists of: At least 12 weeks, which need not be consecutive, in the preceding 12 months of abdominal discomfort or pain that has two of three features: Relieved with defecation and/or Onset associated with a change in frequency of stool and/or Onset associated with a change in form (appearance) of stool. The following symptoms support the diagnosis of IBS: Abnormal bowel movement frequency (more than three per day or less than three per week), Abnormal stool form (lumpy/hard or loose/water), Abnormal stool passage (straining, urgency, or feeling of incomplete evacuation), Mucous passed with stools, Abdominal bloating or distension. There are few effective treatments for IBS. Pharmaceutical medications include anti-diarrheal agents and laxatives, some of which can be harmful if used repeatedly. Significant improvements can be made through dietary changes which can therefore reducing some trigger factors for IBS. It is also important to practice some stress reduction techniques such as breathing techniques, and positive psychology, as there is a direct link between stress and an aggravation of IBS symptoms. The most promising, long-lasting and side-effect free results in the treatment of IBS were based on a large clinical trial conducted at an Australian university, and published in the Journal of the American Medical Association in 1998. These results demonstrated a 64-76% improvement rate on all measures of IBS such as abdominal pain, distention and bowel habits. These results were achieved in a double-blind, placebo controlled clinical trial conducted by gastroenterologists and doctors. The remarkable positive results were achieved in the treatment group that received Chinese herbal treatments. It seems so complicated and time consuming to mix all that stuff and season it and boil it and get it just right. And we don’t know how. We go to a fancy restaurant, and the sauces are so delicate and beautiful, and they are in French, and we know we could never make something like that. Oh, yes, it’s fear and our lack of knowledge that keeps us from enjoying sauces on our home-cooked food. It really isn’t as difficult as you think to make sauces, though. Once you know about the different kinds of sauces and master a few basic techniques, you can easily make sauces at home. You can even begin to invent your own sauces, based on your personal preferences and the things your family likes best. Sauces make your food look, taste and smell better. They make food more appetizing. The difference between a Ham & Egg McMuffin and Eggs Benedict is the hollandaise sauce. And it is a big difference, isn’t it? In the same way, sauces can turn your plain and simple cooking into something special. Sauces add flavor to bland foods, like rice and pasta. Think Alfredo Sauce, Marinara Sauce, Soy Sauce. Sauces also make dry foods moister and easier to eat. Before refrigeration, sauces were used to mask the flavor of tainted food. Although it’s not recommended that you serve tainted food, a good sauce can still mask the flavor of undesirable food. Kids are more likely to eat broccoli with cheese sauce than without, right? For those of us who are somewhat…indifferent cooks, a good sauce can sometimes mask a cooking mistake, too. Like, perhaps, rice that is just a tiny bit scorched. Served by candlelight and with a nice hollandaise sauce, no one will ever know. Categories of Sauces There are all kinds of sauces. Ketchup is a sauce. Salsa is a sauce. Vinaigrette dressing is a sauce. For our cooking purposes, though, there are four main categories of sauces. Sauces made from stock. Stock is the liquid that remains after you cook things in water. The water retains the flavor of whatever was cooked in it, and is used to flavor other dishes. Stock can be thickened or reduced, or various ingredients can be added to it to make brown sauces, white sauces and pan sauces. Sauces from roux. Roux is a mixture of flour and fat that is combined over low heat. Gravy is made from roux. Sauces from emulsions. Emulsions are mixtures of liquids that don’t mix. Mayonnaise is an example of an emulsion. Combinations: Combination sauces are often made from roux and stock, as well as other ingredients. Mother Sauces In the 19th century, Chef Marie-Antoine Careme developed a system for cooking that relied on “mother sauces” or “grand sauces”. Careme is considered the father of classic French cooking. His system was also used by Auguste Escoffier, another famous French chef. The five mother sauces provide the basis for other sauces that are used in classic French cooking. Espagole is a reduced brown sauce made from cooking meat. Veloute is white stock thickened with roux. Bechamel is milk thickened with roux. Hollaindaise or Mayonnaise is an emulsion made with butter or oil, egg yolks and lemon juice. Tomato Sauce is tomato sauce. This all sounds very complex, but it is not. Once you know how to make a nice roux, and how to make stock, you can make hundreds of different sauces. Once you can make the five mother sauces, your sauce repertoire is practically unlimited. Here are some examples: Cheese sauce is bchamel sauce with grated cheese added. Gravy is a roux made from pan drippings and espagole or milk. Cream sauce for vegetables is veloute with a few herbs tossed in. But you don’t have to tell your family and guests that it’s cheese sauce or whatever. Instead, you can serve them “steamed broccoli with a light cheese bchamel” or “steamed vegetables in veloute sauce.” And the list can go on and on. Using sauces to make your home cooked meals look better and taste better does not have to be intimidating. You just need to know a few basic techniques, and you will soon be a master sauce-maker. Do you make the following mistakes in your job search? If so, stop now. And start getting more calls for job interviews. Mistake #1) Not Following Up If you fire off resumes without checking to see if employers get them, and fail to keep in touch until a hiring decision is made, your dream job might go to someone less qualified, but more persistent than you. Here’s how one of my clients, Mike M. from Boston, followed up right. And got a great new job. “After going to about 20 interviews, I found that following up on resumes submitted via email is very important. Probably a third of my interviews were obtained within a day or two after a follow-up,” says Mike. How did he do it? “I sent my resume and cover letter again via email, and included one or two wow’ points about myself in the email message.” Here’s an example of a follow-up email Mike sent: Hello, I would like to follow up on the status of my resume submission for the Forecast Analyst position, as there is a very strong match between the position requirements and my skills and experience. [I've attached my cover letter and resume again for your convenience.] As I have a strong desire to re-enter the consumer products industry, I would again welcome the opportunity for an interview. Mistake #2) Not Thinking Things Through Last week, I tried calling “Jill” (not her real name) in reply to a job search question she had emailed me. After 5 rings, Jill didn’t pick up the phone … and neither did an answering machine. So there was no way to leave a message. What if I had been a busy hiring manager calling to set up a job interview? I would have passed on Jill and phoned the next candidate. So I emailed Jill to suggest that she get an answering machine. Her reply: “I do not have access to an answering machine because of my limited income.” To which I was tempted to answer: “Your income may be limited because potential employers can’t reach you!” Think it through. Would you go trout fishing without a creel? Of course not — how would you carry home the fish you caught? So why send out resumes if you don’t have an answering machine to “catch” calls from employers? Especially when you can buy one at Radio Shack for less than $30 — about what you’d pay for a couple of large pizzas. That’s a fair trade in my book. Question: Are there any “leaks” in your job search? Are employment leads slipping through your fingers? Think it through now. Mistake #3) Not Getting Input From Others After reading more than 10,000 resumes over the years, I’ve found about 90% of job seekers are suffering from an “affliction” that keeps them unemployed. What is it? Let me illustrate with a story … You’re eating dinner and your mom asks: “Could you get me the salt?” You walk into the kitchen and, after searching all the cupboards, you call out in a frustrated voice, “I can’t find the salt!” Then your mom walks in, picks the salt up off the shelf in front of you and says, “Look! It was right here in front of your nose!” In psychological terms, you have a “scotoma.” (Say: ska-toe-ma.) I have discovered that most job seekers suffer from “resume scotoma.” They unknowingly overlook obvious errors in their resume … until someone, like me, points them out. Here’s an example. “Jerry” from New York sent me a resume used to apply for jobs as a logistics manager. Yet, most of his resume was filled with irrelevant facts (”Honorably retired from the United States Marine Corps”), empty assertions (”Extremely dependable”) and unnatural language (”Excel at directing a cohesive staff in the successful attainment of objectives.”) Jerry had overlooked a host of flaws. When I asked if he had shown his resume to anyone for input, his response was a predictable, “No, I never thought of that.” To avoid “resume scotoma” — and get hired faster — show your resume to at least 3 friends before sending it to employers. You need to take the time to become a moreattractive person. Most people don’t like how they look to someextent. And many people use this as an excuse tonot try their best. I hear men acting defeatedthat they’re not six feet tall, so they don’teven try. They let themselves go entirely. Let me tell you: A woman will take a guy of justabout any height that’s well-groomed, healthy,and fashionable over a tall guy who is a mess. If you’re serious about getting the women of yourdreams, you should make a commitment to spend afew minutes each day grooming yourself.
